Chana Saag Curry

Ingredients
1 onion, chopped 12 oz fresh green beans, topped, tailed and halved 1 tablespoon curry paste 1 tsp ground cumin1/4 tsp cayenne peppersalt to taste ground black pepper to taste 1 tsp garlic powder, or to taste 1 cup vegetable juice2 medium Russet potatoes, chopped and par-boiled (about 5 minutes)2 cups cooked garbanzo beans10 oz frozen and thawed chopped spinach1 tsp dried basil
Directions
In a large saucepan over medium heat; saute onions and green beans in 1/4 cup water until onion is translucent.
Stir in curry paste.
Cook, stirring, for 5 minutes.
Add cumin, cayenne, salt, pepper and garlic.
Stir in juice, potatoes and garbanzo beans, cook 5 minutes.
Add spinach and cook until hot.
Remove from heat and stir in basil.
