Potato Leek Soup with sweet potatos-2 cup serve

Ingredients
2 cup Califlower (RAW) 1.5 cup, cubes Sweet potato 250 grams Baked Potato, with skin 2 serving 10 baby carrots raw 2 leek Leeks 5 serving kitchen basics natural veg stock, 1 srv=1 cup (by SUN-SEEKER) .50 cup Sour Cream 3 clove Garlic 1 cup, chopped Onions, raw 1 tsp Thyme, ground 2 tbsp chopped Fresh Chives
Directions
Remove leek stems and cut in half length wise. Rinse to remove any dirt. Slice leeks into 1/4 Inch half rounds. Heat oil in med size heavy bottom pit or dutch oven, over med heat. add leeks and saute about 3-4 mins ad then add onions.
Saute for an additional 5 mins, Add garlic and cook and additional 3 min.
Add potatoes and veg, stock and Thyme. Bring to boil, bring to low and simmer for about 15 min, or until potatoes are tender.
Add pepper.
Blend in batches or use a hand blender until very smooth.
Add sour cream.
Serve with fresh chives!!
