Chicken with Peppers and Onions

Ingredients
1 med onion, sliced2 (4 oz each) boneless, skinless chicken breast, cubed2 tbsp coconut oil 1 tbsp butter, unsalted 2 tsp Italian seasoning 1 large bell pepper, sliced 1 tsp black pepper, or to taste1/2 tsp salt, or to taste 4 slices provolone cheese
Directions
Cook sliced bell peppers and onion in coconut oil on medium heat for 3-4 minutes until just tender. Add butter, chicken and seasonings. Cook until chicken is done and no longer pink. Continue to cook until chicken starts to brown nicely and onions start carmelizing. Lower heat to low and lay whole slices of cheese over all ingredients and place cover on pan until cheese is melted. Serve immediately.
