1 9in pie crust12 slices of bacon1 cup shredded swiss cheese1/3 cup chopped onion4 eggs beaten2 cups milk1 tsp nutmeg
Preheat oven to 425. Place pie crust in pie plate and poke several holes for ventalation. Place pie crust in oven for 15 min until slightly brown. Reduce heat to 350
Cook bacon in large skillet until crisp. Drain on paper towel, then chop coarsely. Saute chopped onion in bacon grease. Add a litte olive oil if needed. Sprinkle bacon, onion and cheese in pie crust.
In bowl, whish together eggs, milk and nutmeg. Pour mixture into pie crust.
Bake pie for 30 minutes or until knife inserted in middle comes out clean. Allow quiche to set for 10 minutes for cutting into wedges.
