Ingredients
6.0 ounces Chicken Breast (cooked), no skin, roasted1.0 cup (8 fl oz) Chicken Broth or Bouillon1.0 cup, chopped Carrots, raw2.0 stalk, large (11"-12" long) Celery, raw1.0 clove Garlic0.5 cup, chopped Onions, raw0.5 cup Spinach, frozen1.5 cup Lentils
Directions
Saute onions, celery, carrots and garlic in one tbsp. olive oil for five minutes. Add broth, 3 cups water, .5 tsp. seasoned salt, cracked pepper, Italian seasoning and lentils. Bring to a boil. Reduce heat and add chopped chicken. Simmer for 1 to 2 hours or until lentils are tender. Serve with a dollop of plain yogurt. Serving Size: Makes about 5 cups
