Kel's REAL FOODS Quiche

Ingredients
0.5 package (10 oz) yields Spinach, frozen .50 sweetpotato, 5" long Sweet potato .5 medium Carrots, raw 7 medium Egg, fresh, whole, raw 1 cup, shredded Cheddar or Colby Cheese, Low Fat 1 tsp Soy sauce (tamari) 1 dash Pepper, black 0.25 tsp condiments, salt, Himalayan pink (by EXOTEC) 4 tbsp Green Peppers (bell peppers) .50 cup Half and Half Cream .25 cup, hulled Sunflower Seeds, without salt
Directions
1. Boil up the cubed sweet potato/kumara
2. Heat spinach, but drain all excess liquid
3. Beat together eggs, cream, Tamari, most of the grated Cheddar cheese (can use feta instead of Colby), salt & pepper.
4. Add in diced green pepper, grated carrot, and other vegetables (can include mushrooms too). Mix together.
5. Mix in the slightly cooled and cooked spinach and sweet potato.
6. Combine altogether and pour into a greased quiche dish.
7. Add a little of the grated cheese, as well as the unsalted sunflower seeds on top.
8. Bake for around 20-30 mins, until cooked through.
