No carb Zucchini cottage cheese mini muffins

Ingredients
1 serving Egg white, large 100 grams Cottage Cheese, Nonfat 200 grams Zucchini 1 tbsp Now Psyllium Husk Powder 1 tbsp Cocoa, dry powder, unsweetened 4 serving Great Value No Calorie Stevia
Directions
Grate the zucchini. Allow to sit in the fridge for 1 hour. Drain well (drink the juice, it's perfect!)
Preheat oven at 200. Mix all ingredients together. Allow to sit for 20 min. Put in 6 mini muffin silicon molds.

Bake for 20 min. Allow to cool on wine rack..
