Roasted Curried Cauliflower

Ingredients
1.0 head, medium (5-6" dia) Cauliflower, raw1.0 tbsp Olive Oil2.0 tsp Curry powder12.0 serving Cherry Tomatoes, Fresh, 1 Tomato0.25 tsp Salt50.0 grams Cilantro, raw
Directions
Cut the florets of the cauliflower and mix with the tomatoes (whole), curry powder, salt and olive oil. Roast at 425 for 20-25 minutes. After you take it out of the oven add the chopped cilantro and mix it in. Enjoy!
