Chicken enchilada casserole-YUM!

1 Lb boneless,skinless chicken breast; cooked and shredded1 Lg yellow onion, chopped2 cns enchilada sauce1 8oz pack reduced fat cheddar (I use weight watchers mexican)! can Fat free refried beans2 tbsp smart balance light1 pk corn tortillasyour favorite seasonings!
* Pre-heat oven to 350.
*Par-boil chicken breast with some spices.
Let cool and shred.
*Take kitchen shears and cut tortillas into triangles.(you should get 4 from each tortilla)
*Chop onion and sautee in smart balance. Mix with chicken and set aside.
*Cover bottom of casserole dish with enchilada sauce and layer with corn tortillas. Then refried beans, chicken mix,sprinkle with cheese.
*Again layer with sauce, tortillas, beans, chicken and cheese. Do this until all ingredients are used and top with cheese.
* Bake at 350 for 30-40 min.
* This recipe makes 4-6 servings.
