Lentil Sausage Stew

1 medium (2-1/2" dia) Onions, diced3 clove Garlic, minced (or one tablespoon)1 lb Lentils 14 oz Hillshire Farm - Lite Polish Kielbasa, cut in 1/2 inch slices1 14 oz can Del Monte Petite Cut Diced Tomatoes 1/2 cup Tomato Paste 2 cup Spinach, fresh, stemmed, chopped in large pieces1 tbsp Olive Oil 1tbsp cumin1 bay leafSalt/pepper to taste
Heat the olive oil in a large stew pot.
Add the onion and garlic, cook until onion is translucent.
Add lentils, sliced sausage, cumin, bay leaf, tomatoes and tomato paste, stir.
Add water to cover, plus 2 inches.
Bring to a boil, then lower to a simmer.
Cook until the lentils are ready to eat, about 30 minutes.
Add chopped spinach, stir just until wilted.
Serve!
