Ingredients
2 bunches fresh curly parsley 3-4 Roma Tomatoes, Med1/4 Red onion, chopped 1 1/4 cup cooked & cooled quinoaSalt & garlic powder to taste2.0 fl oz Lemon Juice2 oz. Olive Oil
Directions
Using a food processor, finely chop parsley, tomatoes and onion. Add cooked, cooled quinoa. Add salt and garlic powder. Mix together lemon juice and olive oil and add to parsley quinoa mixture. Stir to mix well. Serve and enjoy.
