500 gram(s) All-Purpose Flour, unbleached (by TRICOTINE) 2.5 grams Granulated Sugar 5 grams Butter, unsalted .834 ounce Yeast, bakers 7 grams Salt 260 grams Water, tap
Sift the flour and set it aside.
Combine the yeast and water and mix well.
Add the flour, butter, sugar and salt.
Kneed into a dough, ( I cheat and use a Kitchen Aid mixer with a dough hook.) and let rise until doubled. Kneed again and let rise until doubled. (The kneeding wil be about 2x20 minutes.)
Form the Brötchen, *(rolls), and allow to rise.
Take a sharp knife and spit open the top.
Bake at 240Cel/450Fer. for 18-20 minutes. Remember to place an oven safe dish with water in it inside the oven while baking the Brötchen, *(rolls).
Serving Size: Makes 12 rolls, (15 if you like)
