Bulgur and Red Lentil Pilaf with Kale

Ingredients
1/2 cup dried red lentils1 T olive oil1 medium onion, finely diced2 cloves garlic, minced1 tsp whole cumin seeds 1 tsp ground coriander1 cup uncooked bulgur wheat3 cups chopped fresh kale, lightly packed2 cups vegetable stock or kale1/2 tsp salt
Directions
Pick over the lentils, rinse them well, and drain thoroughly. Heat the oil in a heavy-bottomed saucepan over medium heat. Add the onion and saute until lightly browned, about 5 minutes. Add the garlic, cumin seeds, and coriander, and saute for another minute. Add the bulgur and drained lentils and stir and saute for three minutes. Add the kale, stock, and salt and bring to a simmer. Cover tightly, reduce heat to very low and cook for 25 minutes. Without disturbing the lid, turn off the heat and allow to stand 5 minutes.
