Lentil Sweet Potato Puree

Ingredients
1 tbsp olive oil 1/2 sweet onion, diced 3 medium carrots, sliced thin 1 clove garlic, minced 2 tsp curry powder 2 tsp turmeric, ground 1 tsp cinnamon, ground 1/2 tsp cayenne pepper1/2 tsp thyme, ground 1 cup vegetable stock 1 large sweet potato, approx. 2 cup diced2 1/2 cups red lentils 6 to 8 cups water
Directions
Heat oil in large pot and saute onion, carrots and garlic until soft. Add seasonings until blended. Add vegetable stock and cook for a bit. Add potatoes, lentils and water and bring to a boil. Continue to cook until lentils and potatoes are soft and most of the liquid is absorbed.

Puree with immersion blender and serve.
