Summer Cuke Salad

Ingredients
3 cucumbers, cut into bite-sized pieces5 ripe tomatoes, cut into bite-sized pieces(or cherry tomatoes cut in half)1 sweet onion minced1 clove fresh garlic minced1 jalapeno minced (optional but really adds to the flavor)1 cup parmesan cheese1 bottle of Sundried Tomato Vinagrette dressing (or other favorite - Caesar works well too)The night before cut up your veggies and assemble in a large bowl. Add half of the parmesan and half of the dressing. Toss, add salt and pepper to taste. Cover and refrigerate. Before serving, stir and taste - add whatever you feel is missing then serve!**this can be changed for whatever type of meal you are adding it to. I have done a more Mexican taste by adding black beans and salsa or more Italian by changing the dressing to Caesar. You really can't hurt this recipe and it only has 67 calories!!**
