Faux Shrimp Fettucinni

Ingredients
3.0 tbsp Parmesan Cheese, grated6.0 cloves Garlic4.0 cup Spaghetti Squash0.5 package (10 oz) Mixed Vegetables, frozen16.0 oz Shrimp, cooked3.0 serving cheese, Kraft Italian 5 cheese blend (1 oz or 1/4 cup)4.0 tbsp Onion (raw), chopped
Directions
Split and remove seeds from squash. Stem, bake or microwave w a little water till done. Shredd to obtain 4 cups of pulp Meanwhile, chop the onion finely and sautée in butter, add garlic cook 2 min Also cook frozen vegetable in water or broth for 10 min then strain and add to pan w onion and garlic. Season shrimp w old bay, salt pepper Add shrimp to pan cook on one side turn Add shredded squash pulp to shrimp add some water from cooked veggies (maybe 1/2 cup) Toss to coat top w cheeses simmer 3 min. Serving Size: Makes 6-8 1 cup servings

    Made this again useing steamable Asian veggies. Really good! If you like spicy, you could also use a little pinch of cayenne pepper or red chilis. - 7/22/17
