Ingredients
16.0 oz Wegman''s frozen talapia2.0 plum tomato Red Ripe Tomatoes5.0 slices (1" dia) Ginger Root4.0 clove Garlic3.0 medium (4-1/8" long) Scallions, raw2.0 tbsp Sofrito Sauce1.0 tbsp Cumin seed1.0 tbsp Curry powder
Directions
Saute sofrito, garlic (minced), diced ginger, sliced scallion, plus greens cut in 1 inch strips, & cumin seed. Add tomatoes & saute down to a sauce, season w oregano, garam masala, black pepper, curry & salt to taste, add chicken broth if needed. Lay tilapia over top, turn down heat, cook til done.
