Introduction

Number of Servings: 6

Ingredients

    1 medium onion, sliced
    1 medium green bell pepper, sliced
    1 medium red bell pepper, sliced
    2 cups chopped scallions
    2 cans diced stewed tomatoes
    2 tbsp chopped garlic
    5 - 4 oz tilapia filets (or any other hearty white fish), cut into bite sized pieces
    2 tbsp olive oil
    garam masala
    yellow curry
    salt
    pepper
    lemon pepper
    cayenne or red chiles (optional)

Directions

heat olive oil in medium sized stock pot on medium high
Add onions, peppers, scallions and saute for 5 mins
stir in chopped garlic
Add stewed tomatoes, stir for 1 minute
Add enough garam masala and yellow curry so it tastes the way you want it to.
stir in 2 cups of water...add more water if you want a thinner stew
Add salt and pepper to taste
bring mixture to a boil and then lower temp to medium low to simmer.
add pieces of tilapia and cover the pot
The heat of the stew will cook the fish.
When fish is cooked lower the temp further and let sit for at least 15 minutes.
Serve.

    Very Good
    This was a very good recipe...I had it with red beans and rice and the mild spiciness was perfect for a cool fall night. Thumbs up! - 9/18/11
