Green Bean Soup

Ingredients
2 C fresh green beans, cut into 1 inch pieces2 C potato, peeled and diced1 C carrots sliced.2 C water2 C skim milk1 tsp salt1/4 tsp pepperminced onion
Directions
Cover potatos and carrots with a very small amount of water in pan. Bring to boil and turn down and simmer 5 minutes covered. Add salt, pepper, and green beans. Cook about 15 minutes more or until vegetables are tender. Add milk to vegetables without draining water. Heat gently until broth is hot but do not boil. Makes 6 1/2 C servings.
