Easy "Mediterranean" Eggs

Ingredients
1/2 cup Curried couscous (or any flavor you like)3 Egg whites1/4 cup Chickpeas (garbonzo beans)3 Tbsp Mild Pace Chunky Salsa1 Tbsp Grated parmesan cheesea dash of black pepper (to taste)
Directions
1. Prepare couscous as per instructions on the box
2. Spray fry pan with non-stick spray (no butter or oil!) and add the egg whites
3. When the egg whites are almost done, add the chickpeas and stir
4. Next add the couscous and mix
5. Now add the salsa and parmesan cheese. Stir until well mixed. Leave in the pan until heated through.
6. Grab a plate and a fork, add a dash of pepper (optional) and enjoy!

    I loved this variation! To include more vitamins I added broccoli florets, it turned out delicious! - 8/12/08
