Mock Boston Cream Pie

Ingredients
2 1oz packages of instant sugar free vanilla pudding3-3/4 cup skim milk8 oz Cool Whip lite1 box Low Fat Honey Graham crackers1 15oz Pillsbury Reduced Sugar Chocolate frosting
Directions
Mix instant pudding and milk then fold in Cool Whip.
Layer graham crackers whole on bottom of 9x13 pan.
Pour half of pudding mixture over graham crackers.
Add another layer of crackers and rest of pudding mixture.
Add 3rd layer of graham crackers. (I don't use the whole box - just enough for the 3 layers)
Top with chocolate frosting (microwave 15 seconds at a time until pourable) (You don't have to use the entire container- just enough to cover the top)
refrigerate overnight

    This is very close to the recipe I got from a friend when she brought this sinful looking dessert to a potluck. It is very good! The graham crackers make it easy to cut into servings and the thin layer of frosting adds so much to the appearance and the taste! Glad to find this on SP! - 11/14/10
