Stir-Fried Chicken With Rice

16 oz Tyson boneless, skinless chicken breast 1.375 cup Tangerines, (mandarin oranges), canned 2 tbsp Soy Sauce 3 serving Frozen Mixed Veg (Peas, Carrots, Corn) 2/3 cup (by BARB-B) 1.5 cup Uncle Ben's 90 Second Whole Grain Brown Rice (by TRAVELBEX)
1. Cut the chicken into ½-inch cubes. Drain the mandarin oranges and reserve 2 tbsp syrup. Coat a large, heavy bottom skillet with cooking spray and place over medium-high heat.
2. Add chicken cubes to the pan and cook for 4 min., or until browned. Add the soy sauce and reserved mandarin syrup. Reduce heat to medium and stir until chicken is coated. While chicken cooks, prepare rice according to package directions.
3. Add rice and mixed vegetables to the pan and stir-fry over high heat for 3 min. Add the mandarin oranges and stir to combine. Divide among 4 bowls.
