Low Fat Parmesan Turkey Meatballs. Gluten Free

12 oz Ground Turkey (or meat of choice)0.50 cup Oats, Quaker (1 cup dry oats) 1 tbsp Parmasean Cheese (Grated 365) 0.25 tsp Salt 0.25 tsp Pepper, black 2 large Egg, fresh, whole, raw
1. Preheat oven to 400 degrees
2. Use a coffee grinder to grind up oats to a powdery texture.
3. Combine oat powder, parmesan, salt and pepper into a bowl. Use your hands to mix it up nicely.
4. Crack both eggs into a separate bowl and beat well with a fork.
5. With your fingers roll out a meatball about 1 inch wide. Dip the meatball into the egg batter, then roll it in the ground oats until completely covered.
6. Lay out the meatball on a greased baking sheet. Repeat until you have used up your meat and all meatballs are made. They should be laid out on the baking sheet about 1 inch apart.
7. Bake for 20 minutes
