Vegan One Pot Pasta Primavera

Ingredients
3 tbsp Extra Virgin Olive Oil 2 cup 365 Organic Whole Wheat Penne Pasta 12 oz Barilla veggie rotini 3 clove Garlic 2 medium Summer Squash 1 pepper, large (3-3/4" long, 3" dia) Yellow Peppers (bell peppers) 0.5 cup, chopped Broccoli, fresh 0.5 cup Cauliflower, raw 2 medium (4-1/8" long) Scallions, raw 5 oz Tomato, grape (3oz = appro 12 tomatoes) 10 leaves Basil
Directions
Cook pasta according to box directions. Add squash and pepper to pasta 4 minutes before pasta is finished. Add broccoli and cauliflower 3 minutes before pasta is finished. When pasta finished, drain pasta and reserve 1/2-1 cup cooking water. Add olive oil, garlic, scallions, tomatoes, and basil and mix. Add cooking water and heat over medium-low heat for two minutes, then serve. Serving Size: 8 servings
