2 tbsp Olive Oil 1 medium (2-1/2" dia) Onions, chopped3 cloves Garlic, minced2 pounds beef stew meat3 cups Guinness Draught Stout Beer 2 medium (2-1/4" to 3-1/4" dia.) Potato, rough chopped2 medium Carrots, sliced salt and pepper
Heat olive oil an large pot over medium heat. Stir in onion, garlic, salt and pepper.
Cook and stir until onion is translucent, about 5 minutes. Stir in the beef, beer, potatoes and carrots.
Bring to a boil over high heat, then reduce to medium low, cover and simmer until beef is tender, about 2 hours.
