Crockpot Enchilada Quinoa

Ingredients
1 lb Ground Turkey 93% Lean 1 10 oz can Rotel Original 1 15 oz Bush's Reduced Sodium Black Beans 1 10 oz can Old El Paso Green Chile Enchilada Sauce (or red)1.5 cup Quinoa 1 cup chopped bell peppers1.5 cup frozen Corn 1 tsp Taco Seasoning 1 cup Water
Directions
~Place black beans, corn, & tomatoes in crockpot
~In a bowl mix the water and taco seasoning with the quinoa, then add it to the crockpot.
~Stir everything in the crockpot together.
~Top with the enchilada sauce.
~Cook for 2 hours on high
~Cook ground turkey
~Stir crockpot contents, then add turkey
~Cook for another 2 hours on medium
~Stir again and add bell peppers
~Cook for another hour on low
~Top with shredded cheese if desired.
