Irish Soda Biscuits

Ingredients
2 cups all-purpose flour 1/3 cup white sugar ½ teaspoon baking soda ½ cup butter ½ cup raisins¼ teaspoon salt ¼ cup heavy cream1 egg ½ teaspoon Vanilla
Directions
Preheat oven to 350 ˚ F. Combine dry ingredients in a mixing bowl. In a separate bowl cream and sugar until light and fluffy. Add the egg then the cream or buttermilk and the vanilla and mix well. Stir in fruit or chips. Add the dry ingredients in 3 batches, mix well between each 1. Scoop dough onto a cookie sheet Bake for 12 to 14 minutes or until slightly browned. For Chocolate Cookies add ¼ cup cocoa powder.
