Easy Pan fired Lemon Chicken

12 oz Tyson boneless, skinless chicken breast 2 large (7-1/4" to 8-1/2" long) Carrots, raw 4 stalk, large (11"-12" long) Celery, raw 1 fl oz Lemon Juice 2.5 1tsp Olive Oil
Flatten chicken breast with rolling pin or meat pounder. Place chicken and veggies in zip-top bag with lemon juice, 2 tablespoons olive oil, salt and pepper. Optional: Marinate for 30 minutes. Heat skillet over medium-high heat and add ½ teaspoon oil. Add veggies and chicken. Cook chicken four to five minutes each side, or until done. Let meat rest five minutes before slicing. Makes 2 servings.
