1 stalk, large (11"-12" long) Celery, raw 1 cup Egg substitute, liquid (Egg Beaters) 1 cup, pieces or slices Mushrooms, fresh .25 cup Olive Oil .25 cup, chopped Peppers, sweet, red, fresh 1 cup White Rice, long grain, cooked 1 cup kernels Yellow Sweet Corn, Frozen 3 clove Garlic 4 tsp Ginger Root 1 tsp Soy Sauce 1 1tsp Sesame Oil 1.5 cup Bean sprouts 3 medium (4-1/8" long) Scallions, raw 1 cup Taylor Farms Sweet Kale Chopped Salad (salad only)
heat oil in big skillet i was impatient so i just threw all the veggies and aromatics in at the same time but not the sesame oil or soy sauce or eggs. after all the veggies are hot and cooked add the soy sauce and sesame oil. stir well, i also sprinkle in some red pepper flakes. when everything is seasoned and hot and cooked pour egg whites over it and try to flip it over like an omlet, mine didnt' work but the egg helped to keep things together .
