Banana Pancakes

Ingredients
1 c. whole wheat flour1/2 c. flour2 tbsp. sugar2 tsp. baking powder1/2 tsp salt1/4 egg substitute1 1/4 c. fat-free milk3 medium ripe bananas, mashed1 tsp. vanilla
Directions
In a large bowl, combine the flours, sugar, baking powder and salt. Combine the egg, milk, bananas and vanilla; stir into dry ingredients just until moistened.

Pour batter by 1/4 cupfuls onto a hot griddle coated with cooking spray. Turn when bubbles form on top; cook until second side is golden brown.

Yields: 14 pancakes; 2 pancakes per serving
