Quinoa Primavera

Ingredients
1 TBSP Olive Oil1 Red Pepper chopped1 cup Carrots chopped2 cloves garlic1 cup Quinoa, rinsed2 cups Chicken Broth1 tsp Italian seasoning1 tsp salt1/2 tsp pepper1/3 tsp crushed red pepper flakes1 can white beans rinsed and drained1 cup Peas, frozen 1/2 cup milk1/4 cup Parmesan Cheese, grated
Directions
Saute carrots and red pepper in oil until soft. Add garlic, stir for 30 seconds until fragrant. Add Quinoa, broth, Italian seasoning, salt, pepper, and crushed red pepper flakes. Bring to boil. Reduce heat to low.
Simmer 20 minutes or until quinoa is done. Add frozen peas and beans. Simmer 5 minutes more.
Stir in milk and parmesan cheese.
