Shaved Asparagus and Prosciutto Salad

Ingredients
350 grams Asparagus, fresh 1 serving Lemon, fresh squeezed, juice of one whole lemon 3 tbsp Extra Virgin Olive Oil 2 oz Prosciutto (fried)1oz Shaved Parmesan CheeseSalt & Pepper to taste
Directions
Shave each stalk of asparagus, but cut off tips and retain to steam at another time. Lightly fry prosciutto in a pan sprayed with Pam. Be careful to not overcook it. Whisk lemon juice, olive oil, salt and pepper and pour over shaved asparagus, toss well, top with shaved parmesan and torn prosciutto. Chill for at least 20 minutes prior to serving.
