Tammy's Breakfast Fritatta

Ingredients
1 cup egg substitute (egg beaters)1/2 cup crumbled veggi burger (morning star)1/2 cup chopped brocolli florets (fresh or frozen)1/3 cup chopped green bellpepper1/2 cup sliced fresh mushrooms1/3 cup chopped onion1 tbsp chopped parsley (fresh or dried)1 tsp black pepperdash of salt1 tbsp olive oil1 tbsp of grated parmesan cheese
Directions
In a small bowl mix the egg substitue, salt, pepper and parsley.
Heat Olive Oil in a medium non stick fry pan on medium heat- add oinon, brocolli, bellpepper and mushrooms and saute for about 3 min. untill soft. Add crumbled veggi burger and and saute for another 2 min.
Pour egg substitue mixture on top of sauted veggies, and cook until egg mixture is firm enough to flip over. Now Flip the Fritatta over and cook for about another 1 min. it should be a little browned when done. Top with grated pamesan cheese.
with spatulla split the Fritatta in half and slide onto serving plates. Ejoy!
