Chocolate Vanilla or Mint Pops

Ingredients
1/3 cup Granulated Sugar 2 tbsp Cocoa, dry powder, unsweetened 1. 1/4cup Milk, nonfat (skim milk) 1 serving Unflavored Gelatin (1 Pkg.) 1 tsp Vanilla Extract or 1/2 tsp mint extract1 dash Salt
Directions
In a small pot, combine the sugar and the cocoa powder. Pour ¾ cup of the milk into the pot and whisk until thoroughly combined. Place the mixture on the stove and cook over medium heat, whisking occasionally.
Place remaining ½ cup of milk in small bowl. Sprinkle the gelatin over the milk and set aside to soften for 10 min.

Once the cocoa mixture is hot and the sugar has melted, pour in the remaining milk with the softened gelatin. Whisk until smooth. Remove from the heat and whisk in the vanilla and salt. Pour the mixture into the molds and freeze.
