Mixed Veggie Omelet

Ingredients
 2.0 slices Turkey breast, sliced, oven roasted, luncheon meat 1.0 can (300 x 407) Asparagus, canned 1.0 cup Mushrooms, canned 2 scrambled eggs + 1 scrambed egg white 1.7 cup Best Choice Canned Mixed Vegetables (nutrition info is for unrinsed product)
Directions
Ç Wash all canned vegetables Ç Drain them well and chop veggies (reserve a small portion of each type for garnish) Ç Dry fry the vegetables to evaporate as much moisture as possible Ç beat eggs and egg white Ç fold mushrooms, mixed vegetables, and chopped turkey breast into the beaten eggs Ç Pour the egg mixture into a hot iron skillet and cover with a lid to cook the eggs on top and bottom. Ç Just before cooking is complete, place chopped asparagus on one side of eggs and fold omelet over. Ç Complete cooking and serve up hot!
