Strawberry Chia Jam

2 cup, halves Strawberries, fresh 2.5 tbsp chia seeds 1 tsp Vanilla Extract 7 tsp Wholesome Sweeteners Organic Sugar - Evaporated sugar cane juice (by SHERRI281) .5 tbsp Fresh Mint Leaves (by SARAHMROACH)
Coarsely chop the strawberries. Place in saucepan and cook over medium heat. Use a fork to crush the berries as they cook.
Stir in the chia seeds, vanilla, and evaporated cane juice. Make sure that all the chia seeds are moistened.
Put in a covered container and refrigerate for 6 hours or longer. If necessary, stir in water, 1 tablespoon at a time to reach desired consistency.
It will keep in the refrigerator for about 2 weeks.
Serving Size: 2 tablespoons
