Zucchini "Meatballs"

Ingredients
2# Zucchini, shredded4 oz. Parm cheese grated4 oz. Panko3.0 clove Garlic, minced1.0 cup, chopped Onions, raw1.0 large Egg, fresh, whole, raw
Directions
Sweat zucchini with 3 gloves of minced garlic and 1 small diced onion. (Sweat them until you don't see water in the pan anymore) Transfer to a bowl, add grated parm, Panko bread crumbs, 1 egg, some garlic powder, and salt & fresh cracked pepper. Use a 1 oz. scoop and place them on a pan (made about 21 balls). Let them rest in the fridge for 30 minutes, then bake at 400* for about 20 minutes. Use convection setting if you have it.
