B & B's Apple Cinnamon Muffins

Ingredients
1.5 cup Flour, white1.0 tsp Baking Soda1.0 tsp Salt1.0 tsp Cinnamon, ground2.0 medium Egg, fresh, whole, raw0.3 cup Canola Oil1.0 cup Granulated Sugar1.0 large (3-1/4" dia) (approx 2 per lb) Apples, fresh with skin0.25 cup Milk, 3.25%
Directions
Pre-heat oven to 350 degrees F. In a big bowl, whisk together the eggs, oil and sugar. Sift in the dry ingredients and mix. Add the peeled and grated apple plus the milk and mix everything together. It should be fairly runny in consistency. Fill a tray with 12 holes and bake for 15 - 20 mins.
