2 tbsp Extra Virgin Olive Oil 1 15.5 oz can Dark Red Kidney Beans, drained & rinsed1 15.5 oz can S&W Premium Chili Beans, drained & rinsed1 15.5 oz can S&W Premium Black Chili Beans, drained & rinsed1 7 oz can Ortega Diced Green Chiles, drained & rinsed1 4 oz can Ortega Diced Jalapenos, drained & rinsed1 7 oz can Chipotle Peppers in Adobo Sauce1 32 oz carton of Swanson Beef Broth, 50% reduced sodium 1.5 lbs 80/20 Ground Beef1 medium yellow onion, diced1 medium red bell pepper, diced1 medium yellow bell pepper, diced1 medium orange bell pepper, diced1 Jalapeno Peppers, diced & seeds removed2 Serrano Peppers, diced & seeds removed2 cloves of Garlic, diced2 tbsp Chili powder 2 tbsp Ground cumin1 tbsp Paprika 1 tbsp Dried Oregano
Heat olive oil in a pan over medium heat. Add onion. Cook until almost translucent, about 2-3 minutes, then add garlic. Stir until fragrant, about 30 sec-1 minute, then add ground beef. Stir, using spatula or wooden spoon to break meat into smaller chunks, cooking until beef is brown and no pink is showing. Drain excess liquid & fat, then add beef, onion, and garlic mixture to slow cooker.
Add the rest of the ingredients to the slow cooker, stirring to blend spices with beef, beans, and vegetables. Cook on low heat for 6-8 hours, stirring & tasting occasionally and add additional spices as needed/to taste.
