Ingredients
1 1/2 cups tapioca flour1 tsp. salt1/2 cup shredded cheddar cheese (or your favorite cheese)1/3 cup olive oil2/3 cup coconut milk1 large egg
Directions
Heat oven to 400°.
Mix all ingredients together well.
Spray a regular-sized muffin tin with cooking spray.
Pour into muffin cups, each cup about 1/2-full.
Bake 20–25 minutes.
Best eaten hot.
