Lemon Roast Potatoes

Ingredients
8 potatoes, quartered lengthwise1 c. water1/2 c. lemon juice2 tbsp. extra virgin olive oil3 cloves garlic, minced2 tsp. salt2 tsp. oregano1 tsp. lemon pepper
Directions
Toss all ingredients together and place in a baking dish or 9" x 13" pan.
Bake at 350F, uncovered and stirring occasionally, for 2 hours or until all liquid is absorbed and potatoes are tender.
Serves 8.
