Asian Eggplant Fry

1 eggplant, unpeeled (approx 1-1 Eggplant, fresh 2 tbsp Extra Virgin Olive Oil 4 tbsp Kikkoman Soy Sauce 1 cup White Rice, long grain, cooked 4 serving Hot Sauce, Sriracha Hot Chili Sauce 1 tsp (5g) 15 leaves Basil
Cube eggplant.
Fry the eggplant in the oil until well cooked adding salt, pepper and chili flakes as you like. (about 15 mins on medium)
Chop and add basil and soy sauce. Reduce heat to medium low and fry for another 2 mins.
Serve over rice.
Add Sriracha if you want more heat.
Serving Size: Makes 2 large bowls of food
