Ingredients
4 cup, cubes Sweet potato 2 cup Beans, black .5 cup, chopped Onions, raw 0.33 cup Poblano Peppers (by DJWELLS1) 165 gram(s) Mangos 1 cup, sliced (165.0 g) .5 tsp Chipotle Chili Powder (by SMARTIEBEE) .2 tsp crushed red pepper flakes (by TORI7HARRISON) 4 tbsp Kikkoman Low Sodium Soy Sauce 4 serving Whole Wheat Tortilla, medium (45g) 3 cup Salsa
Directions
Preheat oven 375. Boil sweet potatoes until tender. Drain and mash potatoes, reserve for later. Combine all other ingredients, except tortillas and salsa . Fold in sweet potatoes. Fill each tortilla with 1/2 - 1 cup of filling. Fold in the sides of each tortilla and then roll into a burrito. Coat 9x9 inch baking pan with 1-2 cups of salsa. Place each burrito seam side down, sided by side in dish. Bake for 20-25 minutes. Remove from oven and allow to cool for 5 minutes.
