12 ounces Neufchatel Cream Cheese2 Eggs Beatenequal to 1/3c. Sugar Substitute Splenda2 Tbl. Sour Cream (lo-fat)1/2 tsp. Vanilla Extract1 Graham Cracker Pie Crust1 C. Frozen Sliced Strawberries in syrup, thawedWhip Cream if desired(not added in cal.count)
1.Make cheesecake filling by blending neufchatel, eggs, sugar, sour cream, and vanilla in a large bowl with a mixer on high speed until smooth. Pour mixture into a large saucepan and cook over medium/high heat , stirring often, for 8 to 10 minutes or until mixture begins to thicken. Mixture should stick to the spoon when it's inverted. Pour cheesecake filling into pie crust and chill for several hours, until cold.
2. To serve, top cheesecake with strawberries and top with whipped cream if desired.
