6.0 serving Farm Fresh Eggs (Medium)12.0 oz Jimmy Dean Fully Cooked Sausage Patty
Remove 6 boiled eggs from package (or hard boiled and peel yourself), set aside, let dry a bit. Pull sausage from package, cut into 6 equal portions. Get a long piece of plastic wrap for rolling out the sausage into thin patties. Place one section of sausage on one side of the plastic, fold the other side of plastic over the top of the sausage, with rolling pin roll sausage out to about 1/2" thick. Pull back top layer of plastic, place the egg on top, roll (with plastic) over the top of the egg, separate sausage from bottom plastic, continue to wrap sausage around the egg. Tuck the ends in and around, making sure the layer is surrounding the egg as evenly as possible, sealing the egg in (the sausage edges can pull apart during the cooking process). Place all 6 sausage wrapped eggs in frying pan, fry to seal the outer layer of sausage lightly. Place in baking dish an cook in the oven at 350 for 20-30 minutes to be sure sausage is fully cooked. Eat immediately or cool and refrigerate. Makes six Scotch Eggs.
