Ingredients
1/2 cup frozen corn1/2 large green bell pepper1/2 large red bell pepper1 jalapeno pepper1/2 cup chopped red onion1/2 cup chopped cilantro leaves2 medium tomatoes, chopped1 small avocado, diced1/2 cup black beans1 cup cooked quinoa1 1/2 Tbsp. lime juice1 Tbsp. extra virgin olive oil3/4 tsp. salt (or to taste)ground cumin, to tastechili powder, to taste
Directions
toast the corn in a frying pan until it starts to scorch
mix all ingredients together in a 2-quart bowl
