Lentil Quinoa Slow Cooker Tacos

Ingredients
1 cup dry brown lentils (by SLOLOSER) 0.5 cup Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry 4 cup Vegetable Broth 4 clove Garlic 2 tsp Chili powder 1 tsp Paprika 1 tbsp Cumin seed 1 cup Diced Tomatos (by AMYLCROY) 1 cup, chopped Onions, raw
Directions
1. Add all the ingredients to a slow cooker and cook on low for 6-8 hours. Before serving, season to taste with salt and pepper (or other spices).
2. Serve with fresh salsa, avocado and a squeeze of lime. We love this over a bed of greens.
My notes:
1. Add half a diced onion, and saute before adding to the crockpot (saute with the garlic for 2 minutes before transferring) -- add spices in last 60 seconds to warm them up.
2. Add a healthy dollop of cumin (about 1 tsp?)
3. Add a can of diced tomatoes for more nutrition.
