Creamy Lemon Greens & Chicken Soup in Slowcooker

6 thigh, bone and skin removed Chicken Thigh 6 cup Swanson Chicken Fat Free Chicken Broth Less Sodium 3 cup, chopped Kale or Sorrell (adds extra lemony flavor!)2.5 cup, chopped Onions, raw 2 tblsp Lemon juice, fresh squeezed8 tbsp Extra Virgin Olive Oil zest of three lemons (about 1 tbsp)salt to taste
Blend 2 cups of broth, olive oil and onions until completely smooth.
Wash kale and slice into 1/2 in strips, set aside.
Add onion mixture to crock pot. Add remaining 4 cups of broth, kale, lemon zest and lemon juice. Place chicken thighs on top. Add a pick of salt if you wish.
Let cook for 6 hours on low crock pot setting, stirring once or twice.
Remove whole thighs and shred into bowl and then cover with broth. Yum!
Serving Size: Serves 6
