Mango Pudding (Dr. Fuhrman inspired)

1/4 cup whole raw almonds 3 Mangoes, peeled and seeded1/4 ripe Banana 3 dates or 1.5 medjool dates, pitted & soaked3 tbsp unsweetened shredded Coconut 1/2 tsp Vanilla extract 1/8 tsp Cinnamon
Rough chop almonds and then put in a blender and grind some more to the point of dust. Then add mangoes, banana, dates, coconut, and vanilla to the blender. Blend until mixture is creamy and smooth, pudding-like.
Place in a serving bowl and refrigerate for at least 2 hours before serving to allow flavors to meld. Top with coconut, nuts/seeds, fresh fruit, and/or raisins/currants.
