Fat Bomb Pork Chops

Ingredients
1 medium (2-1/2" dia) Onions, raw .5 cup, pieces or slices Mushrooms, fresh 1/2 cup Extra Virgin Olive Oil 3 Boneless Pork Loin Chops 1 tsp Garlic powder 1 tsp Nutmeg, ground 1 cup Hellmann's Mayonnaise, room temperature 1 tbsp Balsamic Vinegar
Directions
In a large skillet, sauté onion and mushrooms in oil until they are wilted. Push them aside, making room for pork chops. Add pork chops to the pan, seasoning each chop with garlic powder and nutmeg and brown each side. Continue cooking until chops are cooked through (165 F). Once chops are cooked remove the chops from the pan and allow onions and oil to cool. Stir in mayo and vinegar and whisk until it is well combined with the oil left in the pan. You should have a thick, rich sauce when you are done. If it is too thick you can thin it with a little bit of chicken broth by whisking in 2 tbsp at a time until desired consistency. Ladle sauce over chops and serve.
